New patterns

I wish to design a new set of pattern fonts. When I click 'File\New' I get a set of character fonts with a grey background. My goal is to delete all of these existing/default fonts and create my own.

Unfortunately TypeTool3 does not seem to allow me to delete these existing fonts. Can anyone help me?
