On the Mac, writing an application using Cocoa makes it possible to use unicode text rendering and other advanced typography features natively and makes the application's dealing with unicode much better.

The current version of Fontographer doesn't handle unicode much at all, but the simple principle of its design would be easy to implement in cocoa, and it would be King.
