Fonts generated in release mode (-r) with FDK, in the Finder (OSX) show 'Version' as:

"Version 1.010;PS001.001;hotconv 1.0.57;makeotf.lib2.0.21895"

which I wanna turn into "Version 1.010"

Is that possible?

If you are using the FDK, this value can not be overridden.

You can  to use ttx or OTL Master to make a change to just this field. FontLab also allows you to override this value.
